My Homemade Red Enchilada Sauce

A homemade enchilada sauce makes all the difference in a recipe and is far superior to sauce from a can. If you’re making my Mexican Soy Tostadas, I suggest you try your hand at this no-fuss sauce, which only takes 13 minutes to prep. The key here is to start out with a white roux, a thickening agent, made of oil and flour, then you add the broth and the rest of the ingredients. Feel free to add more chili powder or less to adjust the heat. I like mine mild, so I used 2 tablespoons. Top this sauce on a myriad of recipes and let me know which is your favorite!

Ingredients
  • ¼ cup canola oil
  • 1 ½ T. flour
  • 3 x 8 oz. cans tomato sauce
  • 1 ½ cup chicken broth, or vegetable broth, if vegan
  • 2 T. chili powder
  • 1 T. minced garlic
  • 1 t. Mexican oregano
  • 1 t. ground cumin
  • ½ t. white granulated sugar
  • ¼ t. ground cinnamon
  • ½ t. sea salt
Directions
  • Step 1 Combine the oil and flour in a nonstick skillet over medium-high heat to make a white roux or thickening agent. Heat for 2 minutes or until the mixture thickens into a consistency like gravy. Remove from heat.
  • Step 2 Next, mince 2-3 cloves of garlic or enough to make 1 T. garlic. Toss into the roux. Then, add the tomato sauce, broth, chili powder, oregano, cumin, sugar, salt, and cinnamon. Mix with the roux. Heat over medium-high heat for 15-18 minutes or until the sauce thickens. Note: the sauce will thicken as it stands and, in the fridge, so take that into account. You can also thin with a little broth if you need to but check for the balance of seasonings. Serve with my Mexican Soy Tostadas or your favorite enchilada recipe. Enjoy!
