Gourmet Caesar Salad Dressing
Back when I was tinkering with my Buttermilk Dill Salad Dressing, I concocted a base of cream cheese, mayo, sour cream, and buttermilk. At the time, I thought to myself, this would make a great foundation for Caesar dressing that’d be like nothing on the Web. And boy, was I right! These ingredients added layer after layer of creaminess to my Caesar dressing, which was enriched by hints of nutty Parmesan cheese, tangy Worcestershire sauce, and savory anchovy paste. And if you’re like me, you’ve put off making this recipe because you’re squeamish about anchovy fillets. Rest assured; the anchovy paste barely resembles fish. So, give it a try, and you’ll see why this recipe stands apart from all others!
Ingredients
- ¼ cup buttermilk, reduced fat, 2% milkfat
- ¼ cup or 2 oz. cream cheese, like Philadelphia’s
- ¼ cup Best Foods Real Mayonnaise
- ¼ cup full-fat sour cream
- ½ cup high-quality, freshly shredded Parmesan cheese
- 1 t. anchovy paste
- 2 large cloves or 1 T. minced garlic
- 1 t. Grey Poupon Country Dijon Mustard
- 1 T. freshly squeezed lemon juice
- 1 t. Worcestershire sauce
- ¼ t. sea salt and 1/8 t. ground black pepper if needed
Directions
- Step 1 In a medium mixing bowl, combine the dairy products—the buttermilk, cream cheese, mayo, and sour cream. Mix until incorporated, taking heed to break up any clumps of cream cheese. Then, add the liquids—the lemon juice, mustard, anchovy paste, and Worcestershire sauce—to the dairy products. Stir until all the ingredients are blended.
- Step 2 Next, remove the papery, outer skin from 2 large garlic cloves. My favorite way of doing this is to cut off the end where the root was fused to the bulb. Then, I use the flat side of my knife to press down on the garlic. This typically loosens the outer skin, so peel it off and mince enough for 1 T. of garlic, adding it to the mixing bowl with the other ingredients. Stir well.
- Step 3 Now, shred the Parmesan cheese if it comes in a block. If it comes pre-shredded, just measure out ½ cup. Add to the mixing bowl with the rest of the ingredients and stir.
- Step 4 Finally, season with salt and pepper if needed. Note: the Parmesan adds a salty note to the dressing, so I didn’t need to season it. Taste and adjust to your liking. Serve over your favorite Caesar salad, like my Classic Chicken Caesar Salad (see recipe under Salad). Enjoy!
