Classic Chicken Caesar Salad
Whenever I go out to eat, time and time again, one of my favorite things on the menu to sample is the chef’s version of that timeless chicken Caesar salad. Because of my fondness for this dish, I was motivated to create my own rendition of this widely popular, classic salad. I found that one key to this recipe is to make a homemade Caesar dressing, which adds a punch to this salad with its sharp anchovy paste, sour lemon juice, and pungent garlic cloves. Yet this bold flavor is offset by the salad’s crispy lettuce, the crusted chicken, and its creamy dressing. Ingredients
- 1-1 ½ T. my Gourmet Caesar Salad Dressing, see recipe under Salad, or use store-bought Caesar dressing
- 6 Parmesan-Breaded Chicken Tenders, see recipe under Salad, or use any type of chicken
- Handful of high-quality croutons
- Sprinkle of freshly shaved Parmesan cheese
- 2 cups romaine lettuce
Directions
- Step 1 Shred the lettuce in bite-sized pieces into a salad bowl for serving. Duplicate this by the number of salads being served. After this, measure out 1-1 ½ T. of dressing per salad and toss with the greens until the dressing evenly coats all the leaves.
- Step 2 Next, break up the tenders into smaller pieces or keep the nuggets whole, multiplying them by the number of salads being served. Then, crunch a handful of croutons over the salad/s and sprinkle with Parmesan, increasing the amount per salad served. Toss and eat soon after since the lettuce wilts with the dressing.
My Classic Chicken Caesar Salad is a medley to savor on the palate as each ingredient contributes its own keynote but doesn’t distract from the overall symphony of flavors. On one hand, you have the mild trio of crisp romaine lettuce, crunchy croutons, and breaded chicken tenders. On the other hand, you’re struck by a pungency from the savory anchovy paste, tangy lemon juice, and bold garlic cloves found in the gourmet Caesar dressing.
