Quick and Best Balsamic Vinaigrette
Over twenty years ago, when my sister didn’t yet have kids, she delved into the world of cooking, as she had more time on her hands. I still remember it as if it were yesterday. I was over her house for dinner, and she asked if I would like balsamic vinaigrette to drizzle over my salad? To this day, I can still taste her winning combination of oil, balsamic vinegar, honey, and Dijon. But maybe more striking is what she said to me on that April day: a homemade vinaigrette is so simple and makes all the difference in a salad. She was so right. This quick vinaigrette takes only 9 minutes to make and requires only 7 ingredients, but it raises the flavor status in salads, like my Goat Cheese and Pecan Balsamic Salad, see recipe under Salad.
Ingredients
- 2 T. minced shallots
- 6 T. extra-virgin olive oil
- ¼ cup quality balsamic vinegar
- 1 T. Grey Poupon Country Dijon Mustard
- 1 T. honey
- ¼ t. sea salt
- 1/8 t. ground black pepper
Directions
- Step 1 Mince your shallots in ¼” pieces and add them to a small mixing bowl. Then, measure out the oil, vinegar, mustard, honey, salt, and pepper, tossing them into the bowl with the shallots. Mix all the ingredients well, especially the honey, which needs coaxing to blend with the other ingredients.
- Step 2 Pour the dressing into a jar and cover with a lid. Shake well. Do not mix in a blender, as this dressing is not meant to be blended. Dress your favorite salad, like my Goat Cheese and Pecan Balsamic Salad (see recipe under Salad). Enjoy!
I’ve learned over time that sometimes the simplest recipes are the best. This rings true for my Quick and Best Balsamic Vinaigrette. With only 7 ingredients that take just 9 minutes to make, this recipe adds dazzle to any salad, without a lot of toil and headache.
